How can I create a simple online survey for beginners using LimeSurvey?

There are no better or worse question types. This depends on the design of your survey.
So, please, read the manual about "question types"

and additionally you may download and import the sample surveys, provided here

This one shows all available types.

And you should just select several question types in the GUI and you will see how they look like and if they are suitable for your questionnaire.

Recommended survey settings before publishing

Again, it depends on your needs or the preferred way to run the survey.
Is it a closed or an open survey?
Shall it be allowed to "go back"?
Shall it be allowed to "interrupt the survey and continue later?

Of course you will find some Youtube Tutorials that show how to start
E.g.

And for Germen you may search for Paul Borsdorf

Now you should start to design your survey.
And then - if there are questions -  send the lss export.
Then we see where you are struggling and can give a precise answer to your problem.
