Hi,
I'm on version 6.3.1, can I do direct upgrade to 6.6.8 ? Or I need to install in below version 6.4 > 6.5 > 6.6 ?

You should be able to go directly to 6.6.8. If you stay within the major version (e.g. LS 6.x.x to LS 6.x.x) there should no major issues arise. When going from one major version to the other, I generally would go in steps.
In any way, before any update, make a backup (files and database), so you can roll back should anything go wrong.
But I would not expect anything to go wrong.
