this is a difficult question.
There is no limit in LimeSurvey itself, but your environment may affect it.
Maybe the value of "max_input_vars" in php.ini.
My value is 10000.
  
Here you see that I can insert at least 500 options (version 3.27.17, what is your used version?)
   

Trying to insert 600 options also was successful, but afterwards the "answer option" page was frozen.
Anyway, the answer options are there.

My "max_input_vars" is at 10000 and my version is: 5.0.7 + 210628 and I still have the problem

Then try to set it to 20.000 or something. And also check the maximum execution time for scripts, etc.

Also consider an update to the latest version of LS5, your version 5.0.7 + 210628 is 5 months old and one of the first versions lf LS5.

10 000 must be OK (you check phpconfig to validate it's OK ?)

And be sure that the setting in php.ini is not commented.
I nearly missed that, when I changed the value recently.
