I set up a server with limesurvey on it pack in January, got it working, then the project was parked until now (late July).
Of course, I have forgotten the admin user password, and have not yet created any other users.

Is there a default value I can stuff into the users.password table, like the hash of 'password', just to get me by ? I have root on the server, and root user access to the mysql database, so permissions are not a problem.
I am just unsure as to the hashing used by limesurvey.

You didn't mention the used version.
Some approaches are might outdated.

The ResetPasswordController fix on github worked a charm. Many thanks for pointing me to the right place in the FAQ, it is much appreciated.
