Hi, Antonimo,
did you try what happens in a test survey?
If your survey is not anonymous these values are included in the answer table.
If it is anonymous, of course not and there is - hopefully - no chance to include these values; because then it's NOT anonymous.

And furthermore in the survey you have access to these values by the {TOKEN:...}. There are several posts about that and of course the manual.
E.g. www.limesurvey.org/manual/Tokens/en#Email_placeholders

Or do I misunderstand your question?

In the link I provided, there is explicitly said

If your survey is NOT anonymous, the following field names are available to insert token data in survey text and javascript. You can use these fields in confirmation and notification email template, too.

As of Joffm's link, these should work:

{TOKEN:FIRSTNAME} First Name
{TOKEN:LASTNAME} Last Name

I didn't want to make it too easy.
And give the chance to read this part of the manual and - hopefully - find additional hints.
