In our TFR Responsive template we think we have nearly everything in place.

But....

There is a major thing we want to "attack"and that is the styling of JQuery UI elements. They all get a standard JQuery styling. Overriding this style (making it fit with our styles) will result in a lot of extra CSS, which is already too long for our taste.

Does anyone know of a way of using JQUery UI behaviour/functionality/classes, without including the JQuery UI css? And possibly also without hacking LS core...

Why is overriding CSS no way to go? And isn't CSS not what a template is all about?
Why do you want to prevent using jquery-ui-custom.css ? Or did I got it just wrong?
