I filled out an online survey, where I used LS features such as text align or bold text.
When I downloaded a pdf of the survey, it is showing all of the code.
E.g.
if my response to a question was N/A, it reads (on the pdf) as <p> N/A</P>
will all of the coding show in the response I submitted to the maker of the questionnaire?

Yes, the <p>, etc. will probably show. This is probably something a browser plugin of yours included. Usually responses to text questions should be plain text, no html.

As I don't use Safari I won't be much of a help here. But I don't think that it is a general "Safari" thing.
But now I am curious: where does this function "underline text" come from? By the way, this is most probably the cause of these codes to show up. Sounds like some kind of Browser function or some kind of plugin is offering this function, because I am not aware of this function in Limesurvey during Survey taking. Might be a new feature though.

As I understand this, the designer of the questionnaire inserted a text editing tool like "summernote" or other into a question of type "long text".
This is not a built-in feature of LimeSurvey.
So it might be possible that those HTML tags are handled as "normal" text.
You have to ask resp. inform the admin of the survey
