Always good to share and hear about experiences.
The main two reasons for me having something like carousel/stacks is;
1. Grid questions don't fit on small screens.
And I really want a device agnostic approach, meaning exactly the same look and feel on mobile and PC.
Although the default option in Limesurvey is very nice to render the array in separate single response questions.
I don't want a change in behavior depended on different devices.
2. Grid questions are in fact separate questions but we put them into one big matrix, for me an old punch card effect

I want to be sure people are focussed on the actual statement/question. They need time to read it, think about it and then answer to it.
You are right about that people just can click through the answers.
But that's the same for a grid question.
Nevertherless in both cases you can recognize the speedsters, pattern clickers and straightliners easily.
Maybe it's even good that we spot these people in our data.
How would they have filled in the rest of the survey?
Now we can remove them from our full dataset.
Maybe the best alternative for the grid question is just the normal single response in one big loop
