www.limesurvey.org/manual/Creating_a_new_survey (search for datestamp):

Survey Settings -> Notification & data management -> Date stamp
Help us to help you!
  • Provide your LS version and where it is installed (own server, uni/employer, SaaS hosting, etc.).
  • Always provide a LSS file (not LSQ or LSG).

I think Date stamp can not be updated when survey is active.

Hre : did you update manually your DB ?
