Is it possible to anonymise response data after a survey has finished?

For instance, if a question gathered a responders name and address while the survey was running, can this particular piece of data be deleted from the survey 6 months after the survey closes?

Not automatically.

To have an automatic routine, you would need to be able to label certain questions with a personal data tag. But that would be a feature request via the bugtracker.
There are other survey tools which allow to save these marked questions into a separate database table.

Currently you would have to manually edit the table.
