I'm using the 'Enable token-based response persistence' feature to allow participants to stop and resume, at any time, their surveys. Does this feature have an expiry date? If so, for how long will the user be able to resume the survey after it was closed (but not finished)?

As long as the survey is activated the respondent will be able to return.

But you can set an expiry date for whole survey or by specific user
