My question is, how do I handle the 'Other: [freetext]' option? How I can pipe the answer text into the second question?

A follow up question – is it possible to hide the placeholder answer option when nothing is entered?

Depending on your LS version you can use sub question relevance to show and hide the subquestion, depending on the fact if there was something answered or not.
